Chocolate Lava Brownie Pie

The best chocolate lava brownie pies you'll ever eat are found in this blog.

You know those lava cakes that come out warm and gooey in the center? (my friend in high school used to go to Chili’s just to get theirs) You know, the ones where you wade through the cake topped with cold vanilla bean ice cream to get to the yummy chocolate lava in the middle? Imagine if you could eat just the lava part with a warm buttery crust — well look no further because now, YOU CAN! These pies (plural, because the recipes makes 2 pies) are so incredibly delicious I literally couldn’t stop eating them. These pies — are they brownies? Are the hot fudge? Are they chocolate lava? The bottom line? They’re amazing and incredibly easy to make. You HAVE to let me know if you make them.

Chocolate Lava Brownie Pie

serves 14-16 - 50 minutes

2 unbaked pie shells

1/2 cup butter

1/3 cup semi sweet chocolate chips

6 tbs cocoa powder

2 cups sugar

4 tbs flour

3 eggs

1 tsp vanilla

1/2 tsp salt

1 tsp instant coffee

1/2 can of coconut milk

  1. Preheat oven to 325.

  2. Melt butter & chocolate chips in the microwave in 30 second intervals until melted, stirring after each interval.

  3. Stir remaining ingredients together. & evenly pour into the 2 pie shells.

  4. Bake for 45 minutes. Remove from oven and let stand for 10 minutes.

  5. Serve warm with your favorite ice cream.

South Asia Recipe for One Pie

1 unbaked pie crust (like my Sourdough Discard Pie Crust Recipe)

1/4 cup butter

1/4 cup semi sweet chocolate chips

3 tbs cocoa powder

1 cups sugar

2 tbs flour

2 eggs

1 tsp vanilla

1/2 tsp salt

1/4 cup coconut milk

  1. Preheat oven to 140 degrees Celsius.

  2. Melt butter & chocolate chips in the microwave in 30 second intervals until melted, stirring after each interval.

  3. Stir remaining ingredients together. & evenly pour into pie shell.

  4. Bake for 35-40 minutes until set. Remove from the oven and let stand for 10 minutes.

  5. Serve warm with your favorite ice cream.
