Apple Cheddar Chicken Meatballs

These meatballs are so stinking good. They’re the perfect blend of savory and sweet (and cheesy!) you really can’t go wrong. Ground chicken or turkey, or straight up ground pork if you’re in the states — they’re easy and a really nutritious option for your family. It doesn’t really matter what kind of apple you use — I used gala. For the cheddar cheese — I used Amul pre-shredded cheddar, but d’lecta cheddar would also work great. Once the ingredients are all mixed together — boom! Just broil them on high for about 15 minutes and they’re done.

Apple Cheddar Chicken Meatballs

45 minutes - serves 6-8

500g ground chicken

6 slices of bacon, diced into small pieces

1 medium sized apple, grated (i used gala, but you could use any variety)

1 onion, minced

1 egg, beaten

2/3 cup almond flour

1.5 cups shredded cheddar cheese

1 tsp garlic powder

1 tsp dried thyme

1/2 tsp salt & pepper each

  1. Preheat your oven to convection at 200 with both the top and bottom elements on (if making these in the states, just preheat your broiler).

  2. Mix all ingredients together in a medium sized bowl. Shape into 1 inch meatballs and place on baking sheet. Should make 30 balls.

  3. Bake on the highest rack for 15-20 minutes until golden brown (if making in the states, broil for 7 minutes, flip, and then broil again for 5-7 more minutes).

  4. Serve warm with some the Easiest Greek Potato Fries!

**if you have access to ground pork, you could absolutely use that in place of the ground chicken — just omit the bacon
