The Best Simple Banana Bread

This banana bread is super simple and flawless each time.

This banana bread is one of the easiest things to make, quite honestly, it comes out perfectly each time. It’s delicious, (my friend Sonia’s favorite) and easy to make vegan with minor adjustments. One of the best things about it? The simplicity of it. I don’t know about you, but sometimes I just want plain, simple banana bread — no gimmicks, tricks, or added flavors (although I still stand by my favorite Cinnamon Swirl Pumpkin Banana Bread). It’s perfect with some butter (or maple butter if you’re feeling fancy). I personally hate nuts in brownies or banana bread, so I choose chocolate chips — but if that’s your game, feel free to swap the chocolate chips for pecans or walnuts.

The Best Simple Banana Bread

1 hour 20 minutes - serves 8-10

3 ripe bananas, mashed

1/2 cup butter, coconut oil or ghee melted

1 cup super fine or caster sugar (regular sugar if you’re in the states)

2 eggs, beaten

1 tsp vanilla

1 1/2 cups maida (all purpose flour)

1/2 tsp baking soda

1 tsp salt

1 cup chocolate chips, chocolate chunks, or pecans/walnuts (optional)

  1. Preheat oven to 165 degrees celsius. In a large bowl, mix together the bananas, melted butter, eggs, sugar and vanilla.

  2. In a separate, smaller bowl, mix together the maida, baking soda, and salt. Pour dry ingredients into the large bowl with the wet ingredients. Mix until just combined.

  3. Fold in the chocolate chips. Line a 9x5 bread pan with parchment paper and pour in the batter.

  4. Bake for 1 hour, to 1 hour and 15 minutes until a toothpick comes out clean.
